Mycotoxins and their impact on human health, food safety and significant economic losses have recently been a discussed problem. The most important of these secondary metabolites produced by filamentous fungi include aflatoxins, ochratoxin A, Fusarium mycotoxins, patulin and others. Mycotoxigenic fungi are cosmopolitan microorganisms and therefore thorough sanitation and control of limits of mycotoxins in all steps of food production and storage is crucial.
