Abstract

The aim of the study was to evaluate the dielectric properties of fresh and frozen-thawed common carp (Cyprinus carpio L.) meat under laboratory conditions by a freshness meter (Fish freshness meter; Distell). We studied the suitability of this method to prove or disprove the falsification of meat declared as fresh which was frozen for some time and then thawed. The results demonstrated that the use of freshness meter for common carp meat is appropriate. A 100% confidence level was found in the trial performed and the measured values corresponded to those given by the instrument manufacturer.
